Why? 1. Cleaner flavor: Soaking rinsing leaches some bitter tannins (especially in walnuts/sunflower seed), so the nutty taste is smooth and clean. 2. Crispier bite: Soaking improves texture because the nuts and seeds swell, and after drying it is more brittle, more porous. The res
