Cookies: •1 cup salted butter, softened •1 3/4 cup sugar •16 oz whole milk ricotta •2 eggs •3.5 cups flour •2 tbs corn starch •2 tbs baking powder •2 tsp vanilla Icing: •2 cups powder sugar •3 tbs heavy cream •1.5 tbs lemon juice •1/2 tsp vanilla Cream butter and sugar until smooth, then mix in eggs, ricotta, and vanilla. Add flour, cornstarch, and baking powder and stir until combined. Scoop about 2 tablespoons of dough
